Well, I'm quiet sure some people including me totally know th U in GNU and have even worked with both UNIX and Ubuntu but simply don't care.

A gnu is a mammal, isn't it? So it's neither Universe nor Underwear as well, I guess.

you should try one of the BSDs - Bodhi, SUSE, Debian. Turns out Debian is made from old bits of Ubuntu that they recycle rather than throwing away, so it's environmentally friendly!
