I guess with the influx of new users to the Fediverse, we're doing introductions now, so here's mine:

I'm a # and # enthusiast and developer. I'm also an # who's trying to create safe spaces for those who are recovering from high-demand control groups.

So this whole # # experiment has been a smashing success. This will be the last post I boost from my legacy accounts, and I'll be checking them with less frequency. If you've not followed the new account, now would be a good time.

I want to extend a special thanks to opencube and fosstodon for giving me my first taste of the #.

Sweet and Sour Meatballs

Forgot to document yesterday's meal, but it came out tasting a lot better than it looked. This one, however, is a winner on all fronts.

Ian Molton doesn't like this.

Stuffed Peppers

These ones were a little more involved, but not that much, and mostly on the prep side. As with a lot of these crock pot meals, it could've done with a bit more seasoning, but only very slightly. One of the better ones so far.

Asian Beef Lettuce Wraps

Having learned from out last crock pot meals, we tweaked this recipe a little bit as we went. These were delicious, but a little messy. Entirely worth it, though.

Breaded Chicken Tenders with Roasted Potatoes and Smoky Garlic Aioli

Another recipe that required the use of the oven that we haven't yet bothered to have fixed. They turned out quite nicely on the stove top.

Spanako-Pizzas with Puff Pastry and Tomato-Cucumber Salad

Another one that I loved and @Katy Lamothe hated.

Tomato and Pesto Grilled Cheese Sandwiches with Goat Cheese and Tomato Soup

A fancy take on a time-honoured classic. It was delicious, but a lot of work for grilled cheese and tomato soup.

#FediFood

Creamy Black Bean Curry with Steamed Rice

Another vegetarian dish. Considering @Katy Lamothe's "no plain rice" rule, we've had a lot of meals with plain rice. No regrets.

BBQ-Glazed Chicken Thighs with Creamy Slaw and Roasted Sweet Potato Rounds

The original recipe called for wedges, but we do what we want.

Side note: working with sweet potatoes is a pain in the ass.

Beef Meatballs and Fresh Veggie Pasta with Sun-Dried Tomato Pesto Sauce

One of the advantages of no longer being allergic to nuts is that I no longer need to fear pesto. I had no idea what I was missing.

Crock Pot Ham and Potato Soup

Taking a step back from the meal kits for a while for reasons discussed in another thread. If they keep coming out like this, we may not go back.

Chicken Fajitas

The tortillas we had were a little oversized for this and they were a little under-seasoned, but we'll make some adjustments for next time. We ended up making them into burritos instead.

Italian Wedding Soup

The meatballs were a little large, and I'm not entirely convinced this soup is even supposed to have carrots in it, but it turned out really well.

Cornmeal-Crusted Chicken Tenders with Smoky Ranch and Mashed Potatoes

Once again, we weren't feeling the potato wedges this meal was supposed to come with, so we made mashed potatoes instead. The sauce was the star of the show. It added a nice zip without being too spicy for @Katy Lamothe.

#FediFood

Fresh Mozzarella Pasta with Sun-Dried Tomato Pesto

This was a redo. It turned out so well last time that we decided to have it again. This time we remembered to keep back some pasta water for the sauce. The end result was creamier.

#FediFood

Harissa-Spiced Chickpea Salad with Creamy Honey-Mustard Dressing

We made a fatal mistake, we forgot to pick the meals in this most recent meal kit batch until after the deadline so they chose for us. This is the meal that @Katy Lamothe was the most apprehensive of. We omitted the potatoes, because putting potatoes in a non potato salad was just a bridge too far.

#FediFood

Cheesy Bacon and Mushroom Flatbread Pizzas with Creamy Garlic Aioli

We actually followed the recipe on this one pretty closely, except that we were supposed to drizzle this with honey. We didn't do that, but it still turned out amazing.

#FediFood

New England-Style Fish Chowder

We've made this one before, but thought it was worth another go. Every bit as delicious as I remember.

#FediFood

Linguine Beef Ragu with Parmesan Cheese

Three meal kits in one day because we've been lazy about cooking them and needed to catch up. I'm not normally excited about spaghetti-type dishes, but this was next level.

#FediFood

Linguine in a Blush Sauce with Pan-Seared Tomatoes

Another vegetatian dish. I know the last recipe was linguine too, but this was sufficienly different to keep it interesting anyways.

#FediFood

BBQ-Spiced Chicken Dinner with Warm and Tangy Potato Salad

Best potato salad I've ever had. We decided to make the chicken into a chicken sandwich. It was a good call.

#FediFood

Garlicky Spaghetti and Beef Meatballs with Homemade Sugo Sauce

I don't know what sugo sauce is, but it's delicious.

#FediFood

Carnitas-Style Pork Tacos with Chili Crema

We made a lunch of these because we're having to play catch-up again. Given the portion size, it was a good call. We got the recipe slightly wrong, but they came out well anyways.

Halloumi Hummus Bowls with Pearl Couscous

Okay, I need a minute to explain this one. @Katy Lamothe is not a very adventurous eater to say the least, so it took a while for her to even be willing to try halloumi. Neither of us had ever had it before now.

Oh. My. God.

I was a little worried as we were making it. I tried a piece of halloumi before it had been cooked and it was... interesting. Not bad per se, but exactly the kind of thing that Katy does not like.

When it's cooked, it's an entirely different animal. It's a bit like chicken with a slightly cheesy finish, and I think it may be one our new favourite meat alternatives. It comes out a little dry, but that was perfectly balanced out by the couscous.

We will be making this again.

Shout out to # (who's not on the Fediverse as far as I know). While everyone else seems to be making their menu items smaller, I'm pretty sure they've increased the size of their slices.

Creamy Pesto Chicken with Buttery Orzo ๐Ÿ”

This was another fairly simple dish, yet once again, despite it's simplicity it was amazingly delicious. I worried that the garlic spice blend was going to overtake the dish, but as usual all the flavours complmented eachother so nicely.

#

Classic Beef Bolognese with Linguine

A pretty classic dish. We went pretty light on the chili flakes on this one, but it still nad a nice kick to it.

Honey Garlic Turkey Bowls with Bok Choy and Roasted Peanuts ๐Ÿฆƒ๐Ÿง„๐Ÿฅœ

This one was definitely worth the burn I earned in the kitchen today. Awesomely enough, there was no proprietary spice blend for this one, so I could totally recreate it if I were so inclined.

#
Moroccan-Inspired Fish Tagine with Chickpeas and Couscous ๐Ÿ‡ฒ๐Ÿ‡ฆ๐ŸŸ๐ŸŒถ๏ธ

I never knew couscous was such a magical entity.

#
Cheesy Bacon Pasta with Garlicky Broccoli ๐Ÿง€๐Ÿฅ“๐Ÿฅฆ

We kinda messed this recipe up and had to improvise a little, but it still turned out amazing. Also took a picture before plating because it looked so good coming out of the oven.

It seems that the lens on my camera was slightly smudged for the second picture. I didn't notice at the time.
Mushroom Bibimbap-Style Bowls with Sticky Rice and Gochujang Drizzle (๋น„๋น”๋ฐฅ!) ๐Ÿ„๐Ÿ‡ฐ๐Ÿ‡ท

It's been way too long since i've had Korean food... even if it was only Korean-inspired. The mushrooms made a pretty good substitute for the beef.

#
Cajun Beef and Dirty Rice with Jalapeรฑos and Green Onion Mayo ๐Ÿ„๐Ÿš๐ŸŒถ๏ธ

@Katy Lamothe: This one isn't as beautiful as the others.
@Jonathan Lamothe: It's not supposed to be. It's dirty rice.

#
Kung Pao-Style Beef Bowls with Peppers and Carrots ๐Ÿ„๐Ÿซ‘๐Ÿฅ•๐Ÿ

The nice thing about this particular recipe is that it doesn't have a proprietary spice blend, so I don't have to reverse-engineer anything if I want to make it again.

#
I'm not sure where that apple emoji came from. There was no apple in this dish.

Now I want an apple...
Cheesy Pork Meatball Skillet with Veggies and Orzo ๐Ÿง€๐Ÿ–

I somehow managed to sear the meatballs to perfection. This has to be one of the more flavourful dishes I've ever had.

#
Mushroom and Broccoli Pasta with Parmesan Cheese ๐Ÿ„๐Ÿฅฆ๐Ÿ๐Ÿง€

Got to try out another vegetarian dish. I could get used to eating like this.

Confession: I put more parmesan on the dish afterward. It just looked better like this for the picture.

#
BBQ-Spiced Chicken Sandwiches with Oven Wedges and Slaw ๐Ÿ”๐Ÿฅช๐Ÿฅ”

Getting a little more confident diverging from the recipe on the card. Historically, our wedges have been a little floppy, so we did them in the air fryer until we had them the way we liked.

Bacon and Eggs with Toast ๐Ÿฅ“๐Ÿณ

Breakfast (at 12:30PM). Normally, we have a machine that makes Egg McMuffin-esque breakfast sandwiches that we put pre-cooked bacon into. We decided that it was cheaper to buy a bunch of uncooked bacon, and pre-cook it ourselves, but then we had to figure out what to do with all the bacon grease. Decided to use it to fry up some eggs instead of dumping it.

#
Texan Beef Enchiladas with Applewood Charred Corn Sauce ๐Ÿ„๐Ÿซ“๐ŸŒฝ

The corn sauce was surprisingly tangy, but the barbecue sauce in the beef balanced it out surprisingly well.

One of the more simple recipes. Sometimes simple is good.

#
Baja-Style Fish and Rice with Salsa Fresca ๐ŸŸ๐Ÿš๐Ÿ…

Went a little bit off-recipe again. Since we still had a bunch of leftover bacon grease, and I don't know how long it'll keep in the fridge, we substituted that for butter.

It was a good call.

#
Chipotle Black Bean Quesadillas with Homemade Tomato Salsa ๐ŸŒถ๏ธ๐Ÿ…

This was one of the vegetarian options. I'm always a little nervous about how they'll go over, but my concerns were entirely unfounded. We will be making this again.

#
Seared Middle Eastern-Spiced Chicken Tenders with Sheet Pan Veggies and Garlic Sauce ๐Ÿ”๐Ÿง…๐Ÿฅ’๐Ÿง„

We were going to go with the sloppy joes today, but @Katy Lamothe's stomach wasn't feeling up to it, so we went with this one instead.

I have no regrets.

#
Cheesy BBQ Sloppy Joes with Tomato and Baby Greens Salad ๐Ÿง€๐Ÿ”๐Ÿ…๐Ÿฅ—

These were the sloppy joes we were originally going to have last night. The emphasis was definitely on the sloppy part. My salad ended up having an intriguing meat sauce all over it. ๐Ÿ™‚

#
Caribbean-Style Island Beef and Veggie Bowls with Golden Rice ๐Ÿ„๐Ÿซ‘๐Ÿš

This one was not listed as "spicy" but we did find that it had a bit of a heat that built as we ate it. It was a pleasant surprise.

#
Smoky Poblano Chili with Cheesy Croutons and Sour Cream ๐ŸŒถ๏ธ

This one was another vegeterian dish, and it didn't disappoint. The ciabatta buns that came in the kit had actually gone mouldy, but they were sealed in plastic and the rest was fine. Nothing a quick trip to the grocery store couldn't fix.

The end result was delightful.

#
Chili-Cumin Seared Chicken Tacos with Cabbage and Corn Slaw ๐ŸŒถ๏ธ๐Ÿ”๐ŸŒฎ๐ŸŒฝ

We were going to do another vegetarian recipe today, but @Katy Lamothe decided she wanted meat tonight. This was a pretty simple recipe, but the flavours really played well together.

#
BBQ Black Been Taquitos with Guacamole ๐Ÿฅ‘

Another vegetarian recipe today. It's actually rather nice to not have to handle raw meat when preparing the food.

Anyhow, my first bite was rather tortilla-forward, and I was worried that they were only going to be so-so tasting. Those fears were completely unfounded.

#
For the record, I do know how to spell bean.

Stupid autocorrupt.
Cheese Omlette with Bacon and English Muffin ๐Ÿง€๐Ÿณ๐Ÿฅ“

@Katy Lamothe really wanted a cheese omlette today. We only had those processed cheese slices, but I work with what I've got. Would've been better with real cheese, but it was decent.

I took a picture of Katy's plate, because hers came out looking nicer than mine.

#
Sweet Firecracker Turkey Meatballs with Zesty Rice ๐ŸŽ†๐Ÿฆƒ๐Ÿš

These were not as spicy as I was expecting "firecracker" turkey meatballs to be, but they were still quite flavourful. To be honest though, sometimes when food is too spicy, it tends to overwhelm the actual flavour.

#
Banh Mi-Inspired Pork Burgers with Oven Fries and Gochujang Mayo ๐Ÿ–๐Ÿ”๐ŸŸ

The gochujang mayo gave this a nice kick, but also served as an amazing dipping sauce for the fries.

#
Buttery Pan-Seared Golden Basa with Ginger Infused Rice and Veggies ๐Ÿงˆ๐ŸŸ๐Ÿš๐Ÿฅ’๐Ÿง…

Okay. I've had people tell me that meal kits are a waste of money, but I never in a million years would've thought to mix lime juice and honey to make the sauce that was drizzled on this.

#
I have subscribed to so many different meal kits over the years, usually just for the discounted promo period, exactly for this little reason. Gather up a dozen or so new recipes, learn some tricks, cancel - and when I'm bored of the same old stuff, pick a new service and repeat. Looks delicious!
Chipotle Pulled Chicken Bowls with Guac and Marinated Tomatoes ๐ŸŒถ๏ธ๐Ÿ”๐Ÿฅ‘๐Ÿ…

Let me paint you a picture with my words. This dish was such a perfect balance of sour and salty with just a hint of spiciness. I was worried that we might've overcooked the chicken, but it just melted in my mouth.

I definitely want to make this one again.

#
Also, this is what it looked like about 20 seconds after that picture was taken.
Coconut Lentil Curry with Crispy Shallots and Cilantro ๐Ÿฅฅ๐Ÿ›

Long before I even tasted this one, I expected by the way it smelled that it was going to be amazing. I was not mistaken.

@me
Somewhere on the internet, I believe I saw someone make a candle out of strained / filtered bacon grease. So when you light ๐Ÿ•ฏ๏ธ the wick it smells like you're making bacon.
